Project objectives were to provide experience in the operation of an estimated lean meat yield (ELMY) classification and grading scheme under West Australian conditions; to compare classification on an ELMY schedule with the current method of payment on a weight and fat grid; and to determine the material benefits of an ELMY based system of carcass description and payment to the West Australian pig industry.
