Abstract: Total tissue thickness measurements were taken with the Tissue Thickness Probe (TTP) on 401 lamb carcases at chain speeds of up to ten carcases per minute. These measurements were then compared to measurements taken with a ruler in the chiller 1/2-3 hours after the TTP measurements. Eighty-eight per cent of the 401 TTP measurements taken at chain speed were within 2 mm of the measurements taken with a ruler.
