Abstract: Hennessy Sheep Grading Probe measurements of fat depth, muscle depth and total tissue depth were recorded at seven sites on 33 lamb carcases. Body length, graded fat score and hot weight were also recorded. The left side of each carcase was dissected into fat, muscle and bone. Multiple linear regressions were used to predict the percentage carcase fat and muscle from tissue measurements at each of the seven sites. A linear regression containing a fat depth measurement taken between the 3/4th lumbar vertebe, a total tissue depth measurement taken between the 12/13th ribs and hot carcase weight was as accurate as a GR measurement taken with a ruler at predicting percentage carcase fat.
