Abstract: Includes a non technical summary.
High relative humidities and water sprays had minimal long term effect on reduction of tension generated and weight loss when used prior to or at the beginning of the chill cycle. Spraying carcasses with a gelatin solution prior to chilling did not reduce carcass weight loss, however tensions were reduced when samples were subjected to this treatment in the laboratory. When sprayed with a 0.5 percent cetyl alcohol emulsion, both tension and carcass weight loss were reduced. To aid in reducing the high
