The original aim of the project was to investigate the combinations of climate, soil, rotation and management that are required to reliably produce wheat grain with suitable protein percentage and starch quality for instant and white noodles. The initial emphasis of the project on instant noodles and the assumption that a slightly higher grain protein would be required in a hard grained wheat has not been entirely borne out by subsequent market analysis and quality assessment. Producers of noodle wheats in the Western Region of Western Australia have had some difficulty in meeting the exacting quality standards that are required to obtain the price premium that applies to the segregation. A program of field experiments and grain quality assessments was conducted to provide management information that would assist growers to improve their success rate in achieving these premiums. Field experiments were conducted to assess the effects of choice of soil type and rotation, nitrogen
